I shared this recipe a bit ago and shared my Christmas Trains before I got to share this one.
It's delicious and different from the normal apple pie!
First off, the crust is usually the most time consuming, messy part of a pie. Feel free to use a store bought crust or use this one. The batch makes 4 pie crusts and are easy to throw in the freezer until you are ready to use them.
Pie Crust
3 c. flour
1 t. salt
1/2 c. cold water
1 T vinegar
2 t. sugar
1 1/2 c. shortening
1 egg
3 c. flour
1 t. salt
1/2 c. cold water
1 T vinegar
2 t. sugar
1 1/2 c. shortening
1 egg
Combine
flour, sugar and salt in mixing bowl. Cut in shortening until it
resembles coarse crumbs. In separate bowl, mix water, egg and vinegar.
Stir into dry ingredients, just until blended. Turn onto floured
counter and knead 5-6 times. Divide into 4 and roll each sections out
to make pie crust.
Now for the fun part, here's what you need:
1/8 t salt
2 T flour
3/4 cup sugar
1 egg
1 cup sour cream
1 t vanilla
1/4 t nutmeg
2 cups apple
{raisins optional}
Sift together salt, flour and sugar. Add egg, sour cream, vanilla and nutmeg. Beat to a smooth batter. Stir in apple (and raisins if you choose to use them). Pour into pastry-lined pie plate.
Bake at 400 for 15 minutes, then at 350 for 30 minutes.
{My mom's oven cooks really fast so I bring it down just a couple minutes on each}
Then you make a delicious topping.
1/3 cup sugar
1 t cinnamon
1/3 cup flour
1/4 cup butter
Mix together, sprinkle over pie.
Return the oven to 400 and bake for 10 minutes until browned.
It is delicious warm or cold!
